I love playing around in the kitchen with cupcake recipes - they are always dairy and egg free as both Molly and I are allergic.  Cupcakes can be simple, filled with fruit, or wonderfully fancy with lots of decoration. It all depends on what you're after. These days I tend to get fancy with 'birthday' or celebration cupcakes but keep the ones for packed lunches a bit plainer. Cupcakes don't need a tonne of butter cream (delicious though it is) to be a wonderful treat.  As Molly has reflux we tend to avoid adding icing for her on a day to day basis as sugar is a trigger.
