Vegan Jam Pastry Hearts

Vegan Pastry Pocket

These are really sweet for Valentines Day. Pastry, jam, a bit of fruit and some icing! For any North Americans out there - think home made Pop Tart! I used Strawberries and Strawberry Jam but Raspberries or Apple's would be nice too.


12 oz self raising flour

6 oz dairy free margarine (I use Pure Sunflower) - chilled and cut into pieces.

1 1/2 tsp cider vinegar

1/4 tsp salt

3-4 tbs cold (pop an ice cube in the water to keep it cold) water

3 tbs caster sugar

Sift the flour and caster sugar into a bowl.

Add the dairy free margarine, salt and cider vinegar.  Using either knives or a pastry cutter cut the margarine into the flour mixture until it resembles bread crumbs. 

Drizzle 2 -3 tbs of cold water over the mixture and combine into a dough. Add another tbs of cold water if the mix doesn't come together.

Chill for 20 minutes.


Roll out the pastry to 1/8 th inch thick and cut into desired shapes - I used a heart shaped cookie cutter.

Spread 1 tsp of Strawberry Jam on a heart, top with two or three slices of strawberry. Wet the side of the pastry shape (or better yet use edible glue to seal), place another pastry cut out on top and seal using a fork. Using a sharp knife cut two small opening in the top for steam to escape.

Vegan Pastry Pocket - Uncooked

Bake for 20 - 25 minutes until the pastry is nice and brown.

Cool on a wire rack.

I then made a thick glaze icing with 1 cup sifted icing sugar, 1/2 tsp vanilla and a few tablespoons of water. Each pocket was covered in the plain icing, then I added red food colouring (and a bit more icing sugar to keep a thick consistency) and using a piping bag and small round nozzle did a swirl on each pocket. You could do white and red swirls thus allowing the pastry to peek out if you like.
