Vegan Rocky Road Ice Cream - Vegan and Gluten Free

Vegan, Gluten Free Rocky Road Ice Cream

I'm so glad I made the plunge into ice cream making. It's wonderful to make ice cream we all love and can eat. Much much easier than I ever thought. Once you've got your 'basic batter' sorted then it's just a matter of adding in your favourite flavours and ingredients. Here is our Vegan Rocky Road!

Basic Batter

This needs to be chilled for a couple of hours in the fridge.

750 ml coconut cream

3/4 cup caster sugar

1 tsp vanilla

1 tsp Xanthan Gum

2 tbsp Golden Syrup

1/2 cup cocoa (or a cup if you want dark chocolate)


Whisk together in a bowl and pop in the fridge; while it's chilling measure out the other ingredients (chocolate chips, marshmallows and Oreo's)


Use in your ice cream maker as per instructions - mine takes about 30 minutes to churn nicely.


Once the churning is done - empty into a large bowl and add in:

1/2 cup dairy free chocolate chips

1/2 cup vegan marshmallows

5 crushed vegan, gluten free Oreo cookies (I get them from Waitrose)

Mix quickly with a large metal spoon and then pop it in an airtight container (tupperwear) and put in the freezer to harden up. Its takes about 3 hours.

You then have the most wonderful ice cream - go crazy and add Vegan (Nut Free) Whipped Cream.
