Baked Salmon with Pomegranate Marinade

Baked Salmon

This is a nice way to make salmon a bit more interesting. We eat a lot so I'm often looking for something to liven it up a bit. I discovered Pomegranate molasses when I was trying out another recipe for chicken and I decided it might be a nice addition to salmon as well.

Free From: Dairy, Egg, Gluten


Salmon fillets (one per person)

1/4 cup olive oil

1/8 cup Pomegranate molasses (you can get this from Waitrose)

1/8 cup soya sauce (or tamara if you are gluten free)

Salt and pepper

Mix the marinade ingredients together and place in a shallow container. Put the salmon fillets in; flesh side down. Spoon some of the marinade over the skin side too. Leave in the fridge for a good 2 hours.


Preheat the oven to 180°C, 370° F

Put the salmon, skin side down, in an oven proof dish. Bake for 16-18 minutes depending on how well done you like your salmon.  It should come out all shiny looking and taste lovely.

I serve it with purple sprouting broccoli and rice or mash.
