Gluten Free, Vegan Oat Chocolate Muffins

Time for some gluten free lovin…oat muffins with a bit of chocolate just to make them special. Molly isn’t allergic to gluten but we find she feels better if she doesn’t have too much. She much prefers gluten free pasta too so we figure her body is telling her something!  These are an easy, lovely muffin to make and vegan as well as gluten free.


Free From: Gluten, Dairy, Eggs, Nuts



1 ½ cup Dove’s Farm gluten free self-rising flour

1 cup caster sugar

¼ cup brown sugar

¾ cup gluten free oats

1 tsp baking soda

½ tsp Xanthan Gum

1 tsp vanilla extract

1 tsp apple cider vinegar

6 tbsp. melted Pure Sunflower Margarine (or other dairy free marg)

1 cup Koko Coconut milk or other dairy free milk such as Rice Dream

1 small ripe banana, mashed

1/3 cup dairy free chocolate drops – I used Sainsbury’s and broke them up into little pieces



Mix the flour, oats, baking soda, xanthan gum and sugars together.

Add in the melted margarine, vanilla, vinegar and banana and mix briefly.

Add the milk slowly mixing all the time. You will have a thickish batter.

Gluten Free, Vegan Oat Muffin Batter

With a wooden spoon mix in the chocolate drops – I think some banana chips on top would be nice too (I didn’t have any handy).

Bake for about 20 minutes or until a toothpick comes out clean.

Cool in the tin for 10 minutes, then move to a wire rack to cool completely.
