This is a simple recipe for chocolate cake that you can use for everyday cakes, or make into something special by making layers or making cup cakes.
1 1/2 cups Gluten Free flour - I used Dove Farms White Self Raising Flour Blend (I still added the bicarbonate of soda)
1 cup caster sugar
1 tsp bicarbonate soda
1/4 cup cocoa
1tsp cider vinegar
1/2 tsp Xantham Gum
6 tbs melted sunflower margarine - I use Pure
1 cup non dairy milk - Koko is good
Preheat oven to 350 F or 177 C
Sift flour, sugar, soda and cocoa into a bowl. Add vanilla, vinegar and melted margarine.
Briefly mix with a spoon then pour one cup non diary milk over and mix with a fork until all ingredients are entirely moist. It makes quite a runny looking batter but don't worry!
For cake, bake for 30 minutes or until a toothpick comes out clean. For cupcakes bake for about 15 minutes but do test them with a toothpick.
For cupcakes cool in the tin for 10 minutes, then on a wire rack. For cake, cool in the tin and invert on a plate when no longer 'too hot to handle'.
