Chicken and Potatoes with Pomegranates

One pot dishes are always good. We are huge fans of meat with fruit and this also has potatoes so we're sold! The recipe calls for pomegranate molasses...heavens only knows where you find that. I added fresh pomegranate to some molasses. It was lovely, we liked the crunch of the pomegranate seeds. If that doesn't appeal - just add the pomegranate juice to the molasses.


8 chicken legs (drumstick and thigh)

16 medium charlotte potatoes, peeled

3 large onions (I use 2)

120g pitted prunes

30g grated ginger

100ml soya sauce (gluten free version)

90 ml pomegranate molasses (or molasses with fresh pomegranate added - one is enough)

1 tbsp maple syrup (if you don't have this I think it would be fine without)

120g sweet mango chutney

1/2 tsp black peppercorns

20g oregano sprigs (we don't use as it makes Molly's mouth hurt)

Pre-heat the oven to 200°C

Mix all the indredients in a bowl,

Tip into a casserole dish

Cover and bake for 10 minutes

Reduce head to 180° and cook for 2 hours

Stir every now and then

Once cooked let it sit for 15 minutes while you prepare whatever veg you are having...we like braised greens, or brocolli
